One of my first concerns when I decided to switch to the Paleo eating style was breakfast. Do I want to eat meat for breakfast? Will I miss toast? Cereal? Oatmeal? How long will it take to make a Paleo breakfast?
Happily, all of my concerns evaporated after the first few days when I discovered the quick, easy, and satisfying possibilities.
Currently, my go-to breakfast is scrambled eggs made with 2 whole eggs and 2 egg whites. I usually add some fresh fruit on the side as I need a little carb hit before my post-breakfast run.
Not only do the eggs take all of 2 minutes to cook, but they actually keep me full for HOURS. I was always a doubting Thomas when it came to the satiating powers of the mighty egg. I am now a believer! I eat breakfast around 8 AM and usually am not hungry for lunch until 1:30 or 2. That is CRAZY long for me. When I used to eat Greek yogurt + toast or oatmeal, I was ALWAYS starving by noon. Ironically my previous breakfast also had at least 1/3 more calories--go figure?!

ReplyDeleteAnd I LOOOOOVE eggs. I have at least one a day and it's a slight obsession. They really do have great staying power!
I looove eggs but seep to go more for the oatmeal because it is the easiest way for me to get the whole grains in there..... I also LOVE a good green monster in the morning or smoothie or something...
ReplyDeleteI eat eggs 1-2 X/ day because they are the cheapest form of protein, completely versatile and keep my blood sugar so level.
