SUCCESS!

I am typically not one to boast or brag, but today, I feel like I have earned a coveted award.

 
 
Today marks the happiest day of my frugal frog life! After the Paleo Faileo coconut debacle of last week I have TRIUMPHED!

I found an EASIER and still cheap way to make coconut butter from scratch in the comfort of your own kitchen. All you need is:



A bag of unsweetened dehydrated coconut (I found this in the “special” organic section of Wegmans and I have also seen it at Whole Foods in the Bulk Bins and in the baking aisle). This bag cost me $2.69. Not bad.

Do NOT get the “reduced-fat” option for 2 reasons: 1) It will not successfully turn into butter and 2) Fat is your FRIEND! Do not fear it!

The second thing you need is a BLENDER! Put those food processors away (or at least the mini chops)! The blender is the TICKET!




There are 3 easy-peasy steps to the coconut butter process:

1)      Pour the coconut into the blender
2)      Blend the coconut (I used the “puree” option) for 10-20 minutes depending on the strength of your blender.  Be sure to scrape down the sides OFTEN.


3)      EAT!



Seriously, I am GLOWING! For less than $3 I made my own jar of coconut goodness! Break out the apples and the sweet potatoes because I am going to town!

  4. yay! You took my advice :) I have that same kind of cocont, but not enough left to try making the butter. I'm so glad it worked out for you, and for not much more than the price of a whole coconut. (and obviously a fraction of the effort!)

  5. I need a blender! And you know what happened to me - I bust my food processor motor this weekend as well - and I thought of you as it happened - hows that for cross atlantic commisseration!
    Fortunately we were done making the crust for our awesome lemon meriangue pie by then... but I have no idea how I am going to cope with a food processor-less future. AGH! xox ps - mine is (was) a mini as well!!

  8. Mmmmm! Way to go girl! I have never had coconut butter which is simply CrAzY because I love coconut from the bottom of my heart! This recipe is good stuff because it is so simple! I'm all over that on a free day!

  9. You are a GENIUS! I bought my first jar of coconut butter the other day at Whole Foods and was freaking out about how expensive it was!

    What exactly do you use it for?! The only thing I can think of is as an oatmeal topper, but I'm at a loss for any other creative ideas. And what technique do you use to warm it up? I'm a coconut butter newb :(

  10. I put coconut butter on top of everything! It is wonderful on bananas, apples, and almost any fruit. It also tastes AMAZING on top of a sweet potato with some ground cinnamon--I DIE. I also like to drizzle it on smoothies, because it gives it extra staying power!

    Also, I just microwave the jar (without the lid on it) for 30 seconds!
