My Day of Paleo Eats

I thought you all might like to see my day of Paleo eating. Today is a fairly typical example of how I like to eat. 

I ate breakfast around 8:00AM. As usual, I had scrambled eggs: 2 eggs + 2 yolks with LOTS of pepper!



I also had some strawberries with drizzles of coconut butter. This stuff is like crack. It is SO yummy. I ate at least a million spoonfuls before I put the jar away. I would say I got a good dose of healthy fats with my breakfast this morning. 



I like to have a combination of protein, fats, and carbs with breakfast since I go on a run right after breakfast. 

Today I ran 7 miles. I am hoping to do a long run tomorrow, so I did not want to run too far. 

Around 1:00 I ate lunch. I sliced and grilled some zucchini with a bit of coconut oil and Mrs. Dash seasonings. These were YUMMY! I also threw in a handful of tomatoes from the Farmer's Market. They are AMAZING. The flavor literally POPS in your mouth. 



I also made a smoothie. While I poured it into an icy glass, this is actually deception at its finest. 



I immediately transferred it to a to-go cup and took it to drink on my drive to work. This was a delicious Banana smoothie made out of:
1 1/2 frozen bananas
1 cup unsweetened coconut milk
2 tsp coconut flakes
1/2 tsp cinnamon

I wanted to make sure to have some good carb re-fueling to make up for the depletion of my run. I also have been getting some leg cramps so I am trying to be diligent at eating some good natural sources of potassium.

I had dinner around 7:45 PM. I sauteed up some broccoli in a bit of coconut oil with more Mrs. Dash seasoning and also had a lovely bun-less burger made out of lean ground beef and onion.




I added some DELICIOUS avocado slices on top. OH MY GOODNESS. This was the perfect avocado. I have a hard time selecting avocados at the market. I want them to be soft, but not too squishy. I found perfection with this one!

I did not include snacks. I usually have an afternoon snack of almonds and fruit, or something of that nature. And I also like to had a snack before bed. For this post, I am just going to show my three "square" meals! 

I hope this provided you with a bit of a peek inside my daily eats. On days like today, when I am running around like crazy, my meals are pretty simple and quick. I hope this shows you that eating Paleo does not require a great deal of time or meal prep.

What are your favorite foods? Right now I cannot get enough avocados, coconut butter and tomatoes. For some reason these three things are REALLY hitting the spot!

  1. This was interesting to see! I eat very similarly to this, although I haven't taken the full paleo plunge (still doing full fat dairy, some cheese etc.) When you use the 2 yolks, do you throw away the whites or save them for something else? And your plate of strawberries looks divine!

  2. Sometimes I save the whites or the yolks for other cooking endeavors. My husband loves Key Lime Pie (He is NOT paleo), so I will save the extra parts of the egg for either extra meringue (if I have lots of whites) or extra yolks for the filling.
