Paleo Smoothie

I have an interview to go to this morning and a full day of errands and working. Consequently, I had to squeeze in a quick 7 mile run early this morning. When I got back, all hot and sweaty, eggs just did not seem appealing. I decided that today is the day for a Paleo Smoothie!


This little beauty is made out of:
1 1/2 frozen bananas
1 cup unsweetened coconut milk
1 tbsp. unsweetened coconut flakes
1/4 tsp. cinnamon



I am very interested to see how long this will keep me full. The healthy fat in the coconut milk should have some staying power. Right now my stomach is happily sated, but only time will tell! It would be great to have an easy "on the go" breakfast recipe in my arsenal. It is a bit difficult to eat scrambled eggs while driving...

Do you like smoothies? Any favorite recipes you would care to share? I am rather new to the smoothie world and would love some more ideas!

  1. I just ate a big pile of scrambled eggs and veggies in the car the other day! Difficult but so worth it (when your in the mood!). Your smoothie looks sooo decadent, I love adding coconut milk although too much does not sit well in my stomach. Did it end up holding you over for a while??

  2. It was AMAZING! I was full for at least a solid 4 1/2 hours! That is success in my book! I have found that the unsweetened coconut milk that is around 50 calories per serving sits much better in my stomach. It is watered down, which for me, makes it easier to digest!

  3. oh yes, that's what I have in my fridge now also. I wasn't sure if you meant the full fat or the watered down. Both are pretty good, although the lesser fat one tastes almost too watery on its own for me.

  4. I like to ad som frossen spinach as well. Can´t taste it, but very healthy :-)
